Breakfast This Morning

We had the most delicious breakfast this morning - sour cream blueberry pancakes! They were scrumptious.  The pancakes themselves had blueberries in them, plus there was a berry sauce made seperately to go over the top. 


For the sauce, instead of using plain blueberries, I used a frozen three-berry mix instead.  It added a little extra flavor to the whole thing.

Blueberry Sour Cream Pancakes

1/2 C. sugar
2 T. cornstarch
1 C. cold water
4 C. fresh or frozen blueberries

PANCAKES:
2 C. flour
1/4 C. sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs
1 1/2 C. milk
1 C. sour cream
1/3 C. butter, melted (I used coconut oil)
1 C. fresh or frozen blueberries

In a large saucepan, combine the sugar and cornstarch.  Stir in water until smooth.  Add the blueberries. Bring to a boil over mdeium heat; cook and stir for 2 minutes or until thickened. Remove from heat; cover and keep warm.

For pancakes, in a large bowl, combine the flour, sugar, baking powder, and salt.  Combine the eggs, sour cream, milk, and butter.  Stir into dry ingredients just ujtil moistened.  Fold in blueberries.  Pour batter by 1/4 cupfuls unto a greased hot griddle.  Cook until browned on both sides; top with berry syrup.

Yum! Those look so delicious! I love pancakes. Speaking of which, we had pancakes for breakfast, too. Jonathan's expression reminds me of our dad. He likes pancakes too!

Dear Rachel,

You look so much like a mature young woman in this kitchen PCX. God bless your ministry in our home. Keep up the great work!!! Of course, I can't eat blueberry or wheat according to the Doctor (at least for now) so try to think of something else for me.
