Muffins and Goats.....

Hi there! Does anyone remember me? I'm Rachel, the girl who hasn't posted for nearly two weeks. (Wow, has it been that long?)

So why haven't I posted for so long? The explanation is easy. Busy, busy, busy.

Anyway, here is a delicous recipe for Chocolate Muffins that our family really enjoys. They are called muffins, but are more of a cupcake than anything! Since I am a chocolate-lover, this recipe definitely ranks high on my list of favorites! So here's the recipe:


Chocolate Muffins


2 2/3 C. flour

1 1/2 C. sugar

1/2 C. baking cocoa

1 1/2 tsp. baking soda

3 eggs

1 C. sour cream or applesauce

1/2 C. water

1/2 C. milk

1/2 C. vegetable oil

1 tsp. vanilla extract

1/2 C. semisweet chocolate chips

In a large bowl, combine flour, sugar, cocoa, and baking soda. In another bowl, whisk eggs, sour cream, water, milk, oil, and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased muffin cups two thirds full. Bake at 325* for 20 - 25 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from racks. Yields: 2 dozen muffins.


And now, on another note, here is Pearl, our very pregnant looking goat!

We are expecting her to give birth in the next few days or so. We are really excited! But also a little nervous, as we have never done this sort of thing before! But, goats give birth just fine out in the wilderness without any help, so more than likely, she'll do fine. We are hoping for girls!!! And yes, I'll post pictures of the new goat babies when they arrive. As we've been saying recently, poor Pearl doesn't know what's coming her way. :) However, we are going to do our best to make her comfy - we are laying nice soft hay in her nighttime shelter, and Jonathan did a marvelous job of creating a milking stand for us.

It is indeed amazing how busy life can get... isn't it?!! Those chocolate muffins looks quite scrumptious.... thank you for being so kind as to post the recipe!!!
